Fluidized bed driers use hot air to dry small, strong products such as peas, diced and sliced vegetables, grains, powders, and herbs. The product sits on a perforated plate or screen and hot air is blown up through the plate and the product becomes entrained in the upward flowing gas stream. The process must be carefully controlled to assure that the product, which becomes lighter as it dries, is properly entrained. Fluidized bed systems dry foods uniformly and quickly, although energy costs tend to be higher than for other options. Most of the energy load is thermal, but these driers also use considerable electricity for fans that must maintain the product in the fluidized bed in addition to moving the hot air through the drier.
